Kiss the Cook: Zucchini on the grill? Yes, please!
Summertime is a great time of the year to eat garden fresh vegetables. Recently, a co-worker gave me a nice zucchini from his garden. Being that I’m in a mood to cook on the grill a lot lately, I decided to try a recipe for grilled zucchini that combined garlic and parmesan cheese.
The recipe below is so simple and easy to make. It makes a perfect vegetable side dish. I added no salt or pepper, but you can add that to taste, if you prefer. The grated parmesan cheese is fantastic on this, but you could get creative and use whatever cheese you have on hand. So, try this easy recipe the next time you get a fresh zucchini, I’m sure you will enjoy it.
Grilled garlic parmesan zucchini
Prep Time: 10 minutes
Ready in: 25 min
Ingredients:
1 large zucchini, cut into 1/8” to ¼” slices
Non-stick cooking spray
3 tbs. salted butter, melted
1 garlic clove, minced, more or less to taste
½ cup shredded parmesan cheese
Directions:
- Slice the zucchini into 1/8” to ¼” slices.
- Spray the cooking spray onto a 9 x 12” cake pan and preheat your gas grill to medium-high heat.
- Combined the butter and garlic into a small bowl and mix well
- Brush both sides of the zucchini slices with the garlic butter mix and lay them flat in the prepared pan
- Sprinkle the parmesan cheese over the slices
- Place the pan onto your preheated grill and cook for about 12 minutes
- Remove and serve. Enjoy!
