Sweeten your grilled favorites with kiwi salsa
Summertime is here! It’s time to get out that grill and enjoy some flavor cooking. Recently, I retired an old, but faithful gas grill for a new smoker, charcoal and gas combination grill.
Obviously, I wanted to cook on it a lot the first week. That got me to thinking about recipes to try or pair with my grilled foods. I had bought a large package of kiwi when they were on sale and they were beginning to ripen.
How can I use the kiwi up, I thought? After a little research, I thought I could make a salsa that would be great paired with fish or eaten simply with tortilla chips.
Below is a tasty recipe for a kiwi salsa that was just fantastic on top of my grilled Mahi Mahi filet. It added a nice mix of fruity sweetness with a little heat from the jalapeno and curry. To me, it was a perfect match. I did try the salsa with lime flavored tortilla chips and it was a great match too. Delicious!

Kiwi Salsa

Ready in: 1 hr. 15 min
Ingredients:
6 ripe kiwi, peeled and diced
½ c. sweet onions, diced
½ c. red bell pepper, diced
1 jalapeno, diced
2 tbs. lime juice
1 tbs. olive oil
1 tbs. honey
½ tsp. cumin
½ tsp. curry powder
Directions:
1). Mix the kiwi, onions, red bell peppers, jalapenos lime juice, olive oil, honey, cumin and curry powder
together in a medium bowl. Allow to rest at room temperature for an hour covered. Refrigerate until
time to serve. Enjoy!
