Molten chocolate love cake perfect for Valentine date night

With Valentine’s Day bearing down on us, it is time to look at the perfect, romantic dessert to set the stage for your date night.
Of course, the dessert needs to be chocolate and a moist delicious one at that.
If you buy cake mix in the store, you end up making more than two servings. This recipe makes two great cakes from scratch. They are just the right size for two people — and perfect for surprising your date following a romantic home-cooked meal.
I made and tested this recipe several times, trying to get the center just right. One thing for sure, though, these were delicious test batches. I’m sure your date will love it, too!

Molten Chocolate Love Cake
Prep Time: 15 minutes
Bake time: 12-13 minutes
Yields: 2-6oz cakes

Ingredients:
1/3 cup semi-sweet chocolate chips
4 tbs. butter
1 egg plus 1 egg yolk
3 tbs. white sugar
1 tsp. Amaretto liquor (can use Whiskey, Cointreau and Frangelico too)
½ tsp. vanilla extract
2 tbs. flour

Directions:
1. Preheat the oven to 425 degrees F. Spray 2-6 oz. Pyrex or custard cups well with non-stick cooking spray.
2. Melt the butter and chocolate in a double boiler or in a microwave using 30 second pulses, stirring between pulses until the mixture is fully melted and combined.
3. In a small bowl, place the egg, egg yolk, sugar, Amaretto liquor and vanilla and then use an electric hand mixer to whisk the mixture for three minutes. Add the flour and fold into the mixture. Add the melted chocolate and continue to fold until the chocolate is evenly combined with the egg mixture.
4. Divide this mixture evenly into the two custard cups. Place them on a cookie sheet on the center rack of the oven and bake for 12-13 minutes. Thirteen minutes will give you a more solid cake, at 12 minutes, the center will be more molten. You may have to experiment to find the time that works best in your oven, but 12-13 minutes is a good range.
5. Remove from the oven and allow to cool for a few minutes before inverting onto a plate. Serve with whipped cream or ice cream. Enjoy!
