Kiss the Cook: Eggs and spinach make quick, healthy meal
Hot breakfast meals that make for a quick, healthy dinner are a favorite of mine. I can eat eggs at any meal.
I recently stumbled onto a recipe that looked delicious and was healthy to boot. It’s so simple and easy to make. It’s perfect for a quick meal in the evening after a long work day.
This recipe has a good amount of spinach in it. Spinach is so healthy for you and if you like spinach, you will love this recipe. Enjoy!
Healthy Spinach & Egg bake
Prep Time: 5 minutes
Cook time: 25 min
Yields: 2 servings
Ingredients:
6 cups packed baby or regular spinach (or use a 9-10 oz. prewashed pack)
4 eggs
3 tbs. feta cheese (divided in half)
Baking spray
Salt and pepper to taste
Directions:
1. Preheat your oven to 400 degrees F. Use 2 small oven safe baking dishes, lightly spray your baking dishes with baking spray or use a little olive oil and grease the dishes with that.
2. Using a deep skillet, cook your spinach for 3-4 minutes with 3-4 tbs of water, covered until it’s wilted.
3. Use your hands or tongs to remove the spinach, squeezing out some of the excess water and divide it evenly between the 2 dishes. Pack slightly, then crack 2 eggs and place on top of the spinach in each dish.
4. Salt and pepper to taste and then sprinkle half the feta cheese over each dish.
5. Bake in the oven for 15 minutes (eggs slightly runny) or 18 minutes (egg yolk is firm).
6. Optional: You can easily add diced tomatoes to this dish before baking, if you like tomatoes. Enjoy!
