Meat lover’s dream: Bacon-wrapped meatloaf a tasty treat
Everything taste better with bacon, some say!
Now combine bacon and pork and you get a double helping of awesome that will be sure to please any of your bacon-loving friends and family. I decided to make this one night and let my taste-testers, my sons, Ryan and Landon, decide if it was good enough to keep. Well, the reaction I got told me this is one recipe we will be making again.
The recipe below is very good, but I have found that you can vary the taste slightly by using different mustard. I have some jalapeno mustard that I really like, so I tried this recipe, but substituted the jalapeno mustard in place of the Dijon mustard. That added a little more kick to the meatloaf.
Bacon-wrapped pork meatloaf
Prep Time: 15 minutes
Cook time: 1 hr.

Ingredients:
2 lbs ground pork (course ground is best)
2 large eggs
½ cup milk
2 tbs. Dijon mustard
1 tbs. Worcestershire sauce
½ tsp. Ground black pepper
1 tsp. kosher salt
¾ cup breadcrumbs
2 tbs. dried parsley
8 slices of bacon (apple smoked)
Directions:
1. Preheat the oven to 400 degrees F.
2. In a large bowl, combine eggs, milk, mustard, Worcestershire sauce, salt and pepper. Whisk until thoroughly mixed. Add the ground pork, breadcrumbs and parsley. Mix with your hands until well combined.
3. Transfer the meatloaf to a 9×5 loaf or similar pan, shape into a loaf. Depending on the length of your bacon, you can use a full slice or half slice and arrange them across the top of the meatloaf.
4. Bake for 1 hour. Remove from heat and let stand 15 minutes. Slice, serve and enjoy!
