Outdoors recipe: A new, easy and tasty way to prepare venison

Mock Chicken Fried Steak

Ingredients:
1 ½ lbs ground venison
1/3 cup finely chopped sweet onion
¾ tsp. Seasoned salt
1 ½ cups butter flavored cracker crumbs (approx. 36 crackers crushed)
1 egg, beaten
¼ cup milk
3 tablespoons vegetable oil (divided in 2)
Directions:
1. In a large bowl, mix together the ground venison, onion and salt. Divide into 6 equal parts and shape patties ½ thick. Place the cracker crumbs in a dish or bowl. In a second dish, combine the egg and milk.
2. Dip the patties in the egg mixture, then the crumbs to coat. Heat 1 ½ tbs. of oil in a small non-stick skillet over medium heat. Fry 3 patties for 4 to 6 minutes or until brown and no longer pink inside flipping once during this. Remove from skillet and set aside. Repeat with the remaining oil and 3 patties.
3. An optional step to make this even better would be to make gravy from the pan drippings. Combine 2 tbs. flour, salt to taste and ½ cup milk, mix well and pour this into the hot skillet. Constantly stirring until the gravy thickens, pour over the patties and enjoy.
